Most of our patrons suggest that approximately 1 cup of Gudway Jaggery is equivalent to every 3/4 cup of regular table sugar. However, it's recommended to adjust based on personal taste preferences.
In comparison to Sugar which is chemically refined to be pure Sucrose (sweetness), the Gudway Jaggery is physically purified and heated sugarcane juice – and hence, the sweetness can vary with every sugarcane and every batch! Generally, the Gudway Jaggery contains about 85-90% sugars. However, the essential minerals like Iron, Magnesium, Potassium, Sodium, etc. along with the natural flavour of naturally occurring molasses give a wholesome taste, in addition to the sweetness!
Gudway Jaggery is crafted from pure sugarcane juice. The process involves extracting juice, filtering impurities using an okra (Bhindi!) stem, boiling, and concentrating the liquid. Gudway Products with the unique ‘GudTech Fusion’ technology are fully natural, without chemical preservatives, and lock just the appropriate amount of moisture, giving you the best taste, texture, and nutrients. However, while being good for you, we recommend you consume them within the below timelines:
• Jaggery Powder and Cubes: Up to 12 months from packing. Store in a cool, dry place with proper sealing to prevent lumping.
• Jaggery Block: Up to 9 months from packing. Keep in a cool, dry place away from direct sunlight.
• Jaggery Liquid: Up to 12 months from packing. Preserve in a cool, dark place; refrigerate after opening for extended freshness. Please consume within a month of opening the pack.
Gudway Jaggery is Dark, as it is natural – it contains naturally occurring molasses which lends the dark brown colour to the Gudway Jaggery. The naturally occurring essential nutrients like Iron, Magnesium, Potassium, etc. also add to the colour being dark!
The dark brown colour is also often attributed to the rigorous boiling of the Sugarcane juice, which leads to caramelization – the same as if you heat sugar at home in a pan, and it turns brown!
In short, the darker the more natural! Beware - some Jaggery available in the market can be chemically bleached to give it a visually appealing lighter shade. Sometimes, sugar is also added to the jaggery to mask the flavour of these chemicals. This is why, always use brands like The Gudway which are trustworthy!
